- 2–3 lbs beef chuck roast
- 4 dried guajillo peppers
- 2 dried ancho peppers
- 1 medium onion
- 4 garlic cloves
- Low-sodium beef broth
- Corn tortillas
- Fresh cilantro
- Soak guajillo and ancho peppers in hot water for 15 minutes. Drain and blend with onion, garlic, salt, cumin, and some beef broth until smooth.
- Cut the chuck roast into large chunks and coat with the marinade. Refrigerate for at least 2 hours or overnight.
- In a pot over medium heat, combine marinated beef with remaining beef broth. Simmer covered on low heat for about 3 hours until tender.
- Remove beef; shred it while reserving the broth.
- Lightly toast corn tortillas in a skillet until warm.
- Fill each tortilla with shredded beef and serve with consomé for dipping.
