  • 23 lbs beef chuck roast
  • 4 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 medium onion
  • 4 garlic cloves
  • Low-sodium beef broth
  • Corn tortillas
  • Fresh cilantro

Instructions

  1. Soak guajillo and ancho peppers in hot water for 15 minutes. Drain and blend with onion, garlic, salt, cumin, and some beef broth until smooth.
  2. Cut the chuck roast into large chunks and coat with the marinade. Refrigerate for at least 2 hours or overnight.
  3. In a pot over medium heat, combine marinated beef with remaining beef broth. Simmer covered on low heat for about 3 hours until tender.
  4. Remove beef; shred it while reserving the broth.
  5. Lightly toast corn tortillas in a skillet until warm.
  6. Fill each tortilla with shredded beef and serve with consomé for dipping.
