  • 2 lbs beef chuck roast, cut into chunks
  • 3 carrots, peeled and chopped into bite-sized pieces
  • 4 medium potatoes, peeled and chopped into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • ½ cup pearl barley (optional)
  • Salt and pepper, to taste
  • 2 tbsp oil (for searing the beef)

Instructions

  1. Prep the vegetables: Chop the onions, carrots, and potatoes into bite-sized pieces.
  2. Sear the beef: Heat 2 tbsp oil in a large pot over medium-high heat. Add the beef chunks and sear them until browned on all sides. Remove the beef from the pot and set it aside.
  3. Sauté the aromatics: In the same pot, add onions and garlic. Sauté until the onions become translucent.
  4. Add the vegetables and broth: Add the carrots, potatoes, and optional pearl barley to the pot. Pour in the beef broth to cover the ingredients. Stir in the fresh thyme sprigs and bay leaves.
  5. Simmer the stew: Return the browned beef to the pot. Cover the pot, reduce the heat to low, and let it simmer for 1.5 to 2 hours until the meat is fork-tender.
  6. Season: Add salt and pepper to taste.
