Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 6 cups beef broth
  • 1 cup elbow macaroni
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Optional: fresh parsley, chopped (for garnish)

Instructions

  • Cook the Ground Beef:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the ground beef and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
    • Remove excess grease if necessary.
  • Sauté Vegetables:
    • Add the diced onion, garlic, carrots, and celery to the pot.
    • Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
  • Build the Broth:
    • Stir in the diced tomatoes, tomato paste, and beef broth.
    • Add Italian seasoning, smoked paprika, salt, and pepper. Stir to combine.
    • Bring the mixture to a boil, then reduce heat to low and let it simmer for 20 minutes.
  • Cook the Macaroni:
    • Stir in the elbow macaroni and cook for an additional 8-10 minutes, or until the pasta is tender.
    • Adjust seasoning with more salt and pepper, if needed.
  • Serve:
    • Ladle the soup into bowls and garnish with fresh parsley if desired. Serve with crusty bread or a side salad for a complete meal.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing Instructions: This soup freezes well for up to 2 months. If freezing, cook the macaroni separately and add it when reheating to prevent it from becoming mushy.
  • Customizations: Add vegetables like zucchini, spinach, or green beans for extra nutrients. You can also use small shell pasta or rotini instead of elbow macaroni.
  • Spice it Up: For a bit of heat, add red pepper flakes or a dash of hot sauce.
