For the Cake:

  • 4 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 tsp vanilla extract

  • Red food coloring (optional)

For the Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/4 cup crushed candy canes (for topping)

Instructions

  1. Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
    • In a mixing bowl, beat eggs and sugar with an electric mixer on high until light and fluffy, about 5 minutes. Add vanilla and peppermint extract and mix well.
    • Sift together flour, baking powder, and salt, then fold into the egg mixture. Be gentle to avoid deflating the batter.
    • Divide the batter in half. Add red food coloring to one half to create a vibrant red color.
    • Drop spoonfuls of the red and plain batter alternately onto the prepared pan. Using a toothpick or skewer, swirl the two batters together gently to create a marble effect.
    • Bake for 12-15 minutes, or until the cake springs back when lightly pressed.
  2. Roll the Cake:
    • While the cake is baking, lay a clean kitchen towel on the counter and dust it with powdered sugar.
    • Once the cake is done, remove it from the oven and immediately turn it out onto the prepared towel. Peel off the parchment paper and carefully roll the cake up in the towel. Let it cool completely.
  3. Prepare the Filling:
    • While the cake is cooling, beat together the cream cheese, powdered sugar, heavy cream, vanilla extract, and peppermint extract until smooth and fluffy.
    • Once the cake has cooled, unroll it gently and spread the filling evenly over the entire surface.
  4. Assemble the Roll Cake:
    • Carefully roll the cake back up, this time without the towel. Place seam-side down on a serving platter.
    • Chill the cake in the fridge for at least 1 hour to set.
  5. Serve:
    • Before serving, sprinkle crushed candy canes over the top for a festive touch. Slice and enjoy!

Notes

  • You can add more peppermint extract to the filling if you want a stronger mint flavor.
  • Make sure to let the cake cool completely before filling and rolling it to prevent the filling from melting.
