Buttery puff pastry is topped with rich caramelized onions, tangy cranberry sauce, and creamy goat cheese, then baked to golden perfection.   • 1 sheet puff pastry, thawed
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon balsamic vinegar
  • ½ cup cranberry sauce (store-bought or homemade)
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon fresh thyme leaves (plus more for garnish)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2️⃣ Caramelize the onions:
In a skillet, melt butter with olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for 15–20 minutes, stirring occasionally, until golden and caramelized. Stir in brown sugar and balsamic vinegar. Cook for an additional 2 minutes, then remove from heat.

3️⃣ Prepare the puff pastry:
Roll out the puff pastry sheet onto the prepared baking sheet. Lightly score a 1-inch border around the edges, being careful not to cut all the way through. Prick the center area with a fork to prevent it from puffing up too much.

4️⃣ Assemble the tart:
Spread the caramelized onions evenly over the center of the puff pastry. Dollop the cranberry sauce on top, then sprinkle with crumbled goat cheese and fresh thyme leaves.

5️⃣ Bake the tart:
Brush the edges of the puff pastry with the beaten egg. Bake in the preheated oven for 20–25 minutes, or until the pastry is golden and flaky.

6️⃣ Garnish and serve:
Let the tart cool slightly before garnishing with additional thyme. Slice into squares or wedges and serve warm.
