  • 1 cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

  • Prepare the ingredients:
    • In a large bowl, combine the drained and rinsed chickpeas, diced cucumber, crumbled feta, and finely diced red onion.
  • Make the dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, dried oregano, salt, and pepper until well combined.
  • Toss the salad:
    • Pour the dressing over the chickpea mixture and toss gently to combine, ensuring all ingredients are well-coated with the dressing.
  • Garnish and serve:
    • Garnish with freshly chopped parsley and serve immediately. If you prefer, you can chill the salad for 20-30 minutes before serving to allow the flavors to meld.

Notes

  • For added flavor, you can toss in some Kalamata olives or cherry tomatoes.
  • This salad can be made ahead of time and stored in the fridge for up to 2 days. The flavors will intensify as it sits.
