  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken (preferably rotisserie chicken)

  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

  • Lemon wedges (optional, for serving)

Instructions

  1. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat.
    • Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

  2. Simmer the Broth:
    • Pour in the chicken broth and bring to a boil.
    • Add the shredded chicken, egg noodles, dried thyme, dried rosemary, bay leaf, salt, and pepper.
    • Reduce the heat and let the soup simmer for 10-12 minutes, or until the noodles are tender.
  3. Season and Finish:
    • Taste the soup and adjust the seasoning with additional salt, pepper, or herbs as needed.
    • Remove the bay leaf before serving.
  4. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley. Serve with a lemon wedge on the side, if desired.
