For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Crumb Topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

For the Glaze (Optional):

  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  • Prepare the Crumb Topping:
    • In a medium bowl, mix together the flour, brown sugar, and cinnamon. Stir in the melted butter until the mixture forms coarse crumbs. Set aside.
  • Mix the Dry Ingredients:
    • In another medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Cream Butter and Sugar:
    • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  • Add Eggs and Vanilla:
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Add Sour Cream and Dry Ingredients:
    • Gradually mix in the dry ingredients alternately with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  • Assemble the Cake:
    • Spread the batter evenly into the prepared baking pan. Sprinkle the crumb topping evenly over the batter.
  • Bake the Cake:
    • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare the Glaze (Optional):
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
  • Serve:
    • Slice and serve with coffee or tea.

Notes

  • You can substitute Greek yogurt for sour cream for a slightly tangy flavor.
  • Add a handful of chopped nuts or dried fruit to the crumb topping for extra texture and flavor.
  • This cake keeps well for up to 3 days when stored in an airtight container at room temperature.
