For the Sausage and Peppers:

  • 4 Italian sausages (mild or spicy, your choice)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and chopped
  • 4 tbsp unsalted butter
  • ½ cup heavy cream (or more for desired consistency)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

 


Instructions

  1. Cook the sausage: Heat a large skillet over medium heat. Add the Italian sausages (whole or sliced into rounds, as preferred) and cook until browned and cooked through, about 5-7 minutes, turning occasionally to ensure even browning. Remove the sausages and set aside.

  2. Sauté the vegetables: In the same skillet, add the sliced bell peppers and onions. Stir frequently and cook until the vegetables are softened, about 5 minutes.

  3. Add garlic: Stir in the minced garlic and cook for another minute, until fragrant.

  4. Make the creamy sauce: Pour in heavy cream, stirring gently to combine. Let the mixture simmer for about 3-5 minutes, or until the sauce slightly thickens. Add salt and pepper to taste.

  5. Prepare mashed potatoes: While the sausage and peppers are simmering, prepare the mashed potatoes. Boil the peeled and chopped potatoes in salted water until tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

  6. Mash the potatoes: Mash the potatoes with butter and heavy cream until smooth and creamy. Season with salt and pepper to taste.

  7. Assemble the dish: Serve the creamy sausage and peppers mixture over a bed of mashed potatoes. Garnish with fresh parsley if desired.
