  • 2 cups sliced mushrooms (cremini, button, or your choice)

  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  • Cook the Gnocchi:
    • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, about 2-3 minutes, until they float to the top. Drain the gnocchi, reserving 1/4 cup of pasta water, and set aside.
  • Sauté the Mushrooms and Garlic:
    • While the gnocchi cooks, heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5-6 minutes, or until they are golden brown and tender. Add the minced garlic and cook for another 1 minute, until fragrant.
  • Add the Spinach and Cream:
    • Stir in the fresh spinach and cook for 2-3 minutes, or until wilted. Add the heavy cream and bring the mixture to a gentle simmer. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  • Combine the Gnocchi and Sauce:
    • Add the cooked gnocchi to the skillet with the mushroom and spinach mixture. Stir gently to coat the gnocchi in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to loosen it. Stir in the grated Parmesan cheese and season with salt, pepper, and thyme (if using).
  • Serve:
    • Once everything is well combined and heated through, serve the creamy gnocchi in bowls. Garnish with fresh parsley and additional Parmesan cheese if desired.

Notes

  • Vegan Option: For a dairy-free version, use a plant-based cream and vegan Parmesan.
  • Add Protein: You can add cooked chicken, shrimp, or sausage for extra protein.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat on the stovetop, adding a little extra cream if needed.
