- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1/4 cup fresh herbs (basil, parsley)
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
- Optional: 1/4 cup grated Parmesan cheese
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
- In a bowl, mix flour, garlic powder, salt, pepper, and chopped herbs until combined.
- Add olive oil and grated zucchini (and Parmesan if using). Mix until a dough forms.
- Drop tablespoon-sized mounds onto the baking sheet, flattening slightly.
- Bake for 20-25 minutes until golden brown around the edges. Let cool before serving.
