For the Cake:

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

For the Chocolate Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • ⅓ cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • ¼ cup heavy cream (more if needed)

For Garnish (Optional):

  • Chocolate shavings or chips
  • Fresh berries or mint leaves

Instructions

1️⃣ Preheat the oven:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2️⃣ Make the cake batter:
In a large bowl, sift together the flour, baking powder, baking soda, salt, cocoa powder, and sugar. Add the eggs, milk, oil, and vanilla extract, and mix until smooth. Gradually add the boiling water, mixing until the batter is well combined (it will be thin).

3️⃣ Bake the cake:
Divide the batter evenly between the prepared cake pans. Bake for 30–35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then remove them from the pans and cool completely on a wire rack.

4️⃣ Make the frosting:
In a large bowl, beat together the butter, powdered sugar, cocoa powder, and vanilla extract. Gradually add the heavy cream, one tablespoon at a time, until the frosting reaches a smooth and spreadable consistency.

5️⃣ Assemble the cake:
Once the cakes are completely cool, spread a layer of frosting on top of the first cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.

6️⃣ Garnish and serve:
Decorate the cake with chocolate shavings, chips, or fresh berries and mint leaves if desired. Slice and enjoy!

Notes

  • For extra richness, add a tablespoon of instant coffee granules to the batter to enhance the chocolate flavor.
  • The frosting can be made ahead of time and stored in the refrigerator for up to 3 days. Just bring it to room temperature before using.
  • This cake can be made as a 3-layer cake by dividing the batter into 3 pans.
