    • 2 cups vanilla wafer crumbs
    • ¼ cup granulated sugar

    • 3 large eggs
    • 1 tsp vanilla extract
    • 1 cup sour cream
    • 1 cup mashed ripe bananas (about 2 bananas)
    • 2 tbsp all-purpose flour
  • For the Topping:
    • 1 ½ cups heavy whipping cream
    • ¼ cup powdered sugar
    • 1 tsp vanilla extract
    • 2 ripe bananas, sliced
    • ¼ cup crushed vanilla wafers (optional)

Instructions

1️⃣ Prepare the Crust:
Preheat your oven to 325°F (165°C). In a medium bowl, combine vanilla wafer crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8–10 minutes, then set aside to cool.

2️⃣ Make the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating after each addition. Stir in vanilla extract and mashed bananas. Gradually add the flour and mix until fully combined.

3️⃣ Assemble the Cheesecake:
Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula. Bake for 50–60 minutes, or until the edges are set and the center has a slight jiggle. Let the cheesecake cool in the oven for 1 hour with the door slightly ajar. Then, refrigerate for at least 4 hours or overnight.

In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

5️⃣ Assemble the Cake:
Once the cheesecake has cooled and set, spread the whipped cream topping over the cheesecake. Decorate with sliced bananas and crushed vanilla wafers if desired.
