  • 34 lbs Chuck Roast
  • 45 Dried Guajillo Chiles
  • 1 Medium Onion
  • 45 Garlic Cloves
  • 1 tbsp Cumin Powder
  • 1 tsp Oregano
  • 4 cups Beef Broth (low-sodium)
  • Corn Tortillas (2 per serving)
  • Lime Wedges

Instructions

  1. Prepare the chiles by removing stems and seeds, then soak them in hot water for 15 minutes until softened.
  2. Blend soaked chiles with onion, garlic cloves, cumin powder, oregano, and some beef broth until smooth.
  3. Marinate the chuck roast in the blended mixture for at least two hours or overnight.
  4. Cook the marinated beef in a slow cooker on low heat for 6 hours or in an oven at 300°F (150°C) for 4 hours.
  5. Shred the cooked beef using two forks and reserve some liquid as consomé.
  6. Warm corn tortillas on a skillet, fill with shredded beef, and serve with lime wedges and reserved consomé.
