Instructions

1️⃣ Prepare the Beets: Preheat your oven to 400°F (200°C). Wrap the beets in foil and roast them for 45–60 minutes, or until they are tender when pierced with a fork. Let them cool slightly, then peel and slice them into wedges or cubes.
2️⃣ Toast the Walnuts: While the beets are roasting, toast the walnuts in a dry pan over medium heat for 3–4 minutes, stirring occasionally, until they are fragrant and lightly browned. Set aside to cool.
3️⃣ Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
4️⃣ Assemble the Salad: In a large bowl, combine the roasted beets, crumbled feta cheese, toasted walnuts, sliced red onion, and parsley.
5️⃣ Dress the Salad: Drizzle the dressing over the salad and gently toss to combine.
6️⃣ Serve: Serve immediately, or refrigerate for up to 2 hours before serving for a slightly chilled salad.
