  • 2 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 12 oz smoked Cajun sausage, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 ½ tsp Cajun seasoning (adjust to taste)
  • ½ cup grated Parmesan cheese (plus extra for garnish)

Instructions

  1. Boil salted water in a large pot and cook the penne pasta according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Sauté the chopped onions and bell peppers until soft, about 5-7 minutes.
  3. Add the sliced Cajun sausage and minced garlic to the skillet, cooking until the sausage is browned and fragrant, about 5 minutes.
  4. Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning and simmer for about 3-5 minutes until the sauce thickens slightly.
  5. Drain the cooked penne pasta and toss it in the skillet with the sausage mixture. Stir in the grated Parmesan cheese until the pasta is well coated.
  6. Serve hot, garnished with extra Parmesan cheese, if desired.
