- 2 tbsp olive oil
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 12 oz smoked Cajun sausage, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 ½ tsp Cajun seasoning (adjust to taste)
- ½ cup grated Parmesan cheese (plus extra for garnish)
- Boil salted water in a large pot and cook the penne pasta according to package instructions until al dente, about 10-12 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Sauté the chopped onions and bell peppers until soft, about 5-7 minutes.
- Add the sliced Cajun sausage and minced garlic to the skillet, cooking until the sausage is browned and fragrant, about 5 minutes.
- Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning and simmer for about 3-5 minutes until the sauce thickens slightly.
- Drain the cooked penne pasta and toss it in the skillet with the sausage mixture. Stir in the grated Parmesan cheese until the pasta is well coated.
- Serve hot, garnished with extra Parmesan cheese, if desired.
