- 3–4 Boneless, Skinless Chicken Breasts
- 2 Ripe Avocados
- 4 Whole Grain Tortilla Wraps
- 2 Cups Mixed Greens (spinach and arugula)
- 1 Cup Halved Cherry Tomatoes
- ½ Cup Greek Yogurt
- Juice of 1 Lemon
- Salt & Pepper to taste
- Season chicken breasts with salt and pepper. Grill over medium heat for 6-7 minutes per side until cooked through; let rest before slicing.
- In a bowl, mash avocados with lemon juice until creamy but chunky. Add salt to taste.
- Lay out tortillas and spread Greek yogurt on each. Layer with mixed greens, sliced chicken, mashed avocado, and cherry tomatoes.
- Roll tortillas tightly, cut in half diagonally, and serve immediately or wrap for later.
