For the Casserole:

  • 2 cups cooked chicken, shredded or cubed (about 2 medium chicken breasts)
  • 4 cups broccoli florets, steamed or blanched
  • 1 cup cooked rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup (or use homemade)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth or milk
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste

For the Topping:

  • 1 cup breadcrumbs (Panko or regular)
  • 2 tbsp unsalted butter, melted
  • 1/4 cup shredded cheddar cheese (optional)

Instructions

  • Prepare the Oven and Casserole Dish:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch casserole dish or line it with parchment paper.
  • Cook the Chicken and Broccoli:
    • If you haven’t already, cook and shred or cube the chicken.
    • Steam or blanch the broccoli florets until they’re tender but still bright green (about 3–4 minutes). Drain well.
  • Make the Casserole Sauce:
    • In a large mixing bowl, combine the cream of chicken soup, sour cream, chicken broth (or milk), garlic powder, onion powder, and both cheddar and Parmesan cheeses.
    • Stir until the mixture is smooth and creamy. Season with salt and pepper to taste.
  • Combine Chicken, Broccoli, and Rice:
    • Add the cooked chicken, steamed broccoli, and cooked rice to the sauce mixture. Stir until everything is well coated.
  • Assemble the Casserole:
    • Pour the chicken, broccoli, rice, and cheese mixture into the prepared casserole dish. Spread it evenly.
  • Make the Topping:
    • In a small bowl, combine the breadcrumbs, melted butter, and 1/4 cup of shredded cheddar cheese (if using). Stir until the breadcrumbs are coated with the butter.
  • Top the Casserole and Bake:
    • Sprinkle the breadcrumb mixture evenly over the top of the casserole.
    • Bake for 25–30 minutes or until the casserole is bubbling around the edges and the topping is golden brown and crispy.
  • Serve:
    • Let the casserole cool for 5 minutes before serving. This dish is perfect on its own or served with a side of salad or bread.

Notes

  • For a healthier version, you can use low-fat or fat-free sour cream and soup.
  • You can also add cooked mushrooms or peas for extra flavor and nutrition.
  • To make this casserole ahead of time, assemble it, cover it, and refrigerate for up to 24 hours before baking.
