For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or Greek yogurt

For the Cinnamon Swirl:

  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper.
  • Prepare the Streusel Topping:
    • In a small bowl, mix the flour, brown sugar, granulated sugar, and cinnamon. Add the melted butter and mix with a fork until crumbs form. Set aside.
  • Mix the Cinnamon Swirl:
    • In another small bowl, combine the brown sugar and cinnamon. Set aside.
  • Prepare the Cake Batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy, about 2–3 minutes.
    • Add the eggs one at a time, beating well after each addition, and stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture alternately with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  • Assemble the Cake:
    • Spread half of the cake batter evenly into the prepared pan. Sprinkle the cinnamon swirl mixture over the batter.
    • Spread the remaining batter over the cinnamon layer, and use a spatula to smooth it out. Top with the prepared streusel.
  • Bake the Cake:
    • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes before slicing and serving.

  • Use Greek yogurt as a substitute for sour cream for a tangier flavor.
