    For the Bowl:

    • 1 cup (180g) cooked brown rice or quinoa
    • ½ cucumber, diced
    • 1 cup (150g) cherry tomatoes, halved
    • ½ small red onion, thinly sliced
    • ¼ cup (40g) crumbled feta cheese

    For the Tahini Yogurt Sauce:

    • 2 tbsp tahini paste
    • ¼ cup (60g) plain Greek yogurt
    • 1 tbsp fresh lemon juice
    • 1 tbsp water (adjust for consistency)
    • ¼ tsp salt

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken breasts and coat well. Cover and refrigerate for at least 1 hour.
  2. Prepare Vegetables: Dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
  3. Cook the Chicken: Grill or cook the marinated chicken over medium-high heat for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes before slicing.
  4. Make the Sauce: Whisk together tahini paste, Greek yogurt, lemon juice, water, and salt until smooth. Adjust consistency with more water if needed.
  5. Assemble the Bowls: Divide cooked rice or quinoa into bowls. Top with sliced chicken, cucumbers, tomatoes, onions, and crumbled feta. Drizzle with the tahini yogurt sauce.
