  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken breasts in this mixture for at least 30 minutes.
  3. Arrange marinated chicken in the baking dish and scatter cherry tomatoes around them.
  4. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  5. Remove from oven and sprinkle feta cheese and parsley over the top before serving.
