- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 cup cherry tomatoes, halved
- ½ cup crumbled feta cheese
- Fresh parsley, chopped for garnish
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken breasts in this mixture for at least 30 minutes.
- Arrange marinated chicken in the baking dish and scatter cherry tomatoes around them.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven and sprinkle feta cheese and parsley over the top before serving.
