    • 1 lb ground beef (80/20 lean-to-fat ratio)
    • 2 green onions, chopped
    • 3 cloves garlic, minced
    • 1 tbsp grated ginger
    • ½ cup panko breadcrumbs
    • 2 tbsp low-sodium soy sauce
    • 1 tsp sesame oil
    • 1 tbsp sriracha sauce (adjust to taste)

For the spicy mayo dip:

    • ½ cup mayonnaise
    • 1 tbsp lemon juice
    • 2 tbsp sriracha sauce (adjust to taste)

Instructions

  1. In a mixing bowl, combine the ground beef, panko breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, sesame oil, and sriracha. Mix until everything is well incorporated.
  2. Shape the mixture into 1-inch meatballs.
  3. Heat 1-2 tbsp oil in a skillet over medium heat. Cook the meatballs in batches, turning them occasionally, until browned on all sides and cooked through, about 8-10 minutes.
  4. For the spicy mayo dip, mix the mayonnaise, lemon juice, and sriracha sauce in a small bowl until smooth. Adjust the sriracha to your desired spice level.
  5. Serve the meatballs on a platter with the spicy mayo dip on the side.
