  • 1 tsp baking powder
  • ½ cup protein powder (vanilla or unflavored)
  • ¼ tsp salt
  • ¾ cup Greek yogurt
  • ⅓ cup honey or maple syrup
  • 2 eggs
  • ½ cup milk (or plant-based milk)
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners or non-stick spray.
  2. In a bowl, mix flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together Greek yogurt, honey (or maple syrup), eggs, and milk until smooth.
  4. Combine wet and dry ingredients gently until just mixed—don’t overmix!
  5. Fold in blueberries carefully.
  6. Fill muffin cups two-thirds full and bake for 18-20 minutes until golden brown.
