Quick Bean Burritos are the ultimate weeknight meal, combining warm tortillas with seasoned black beans, melted cheese, and zesty toppings for a deliciously satisfying experience.

  • 4 medium flour or corn tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup salsa
  • ¼ cup chopped cilantro (optional)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Pinch of salt

Instructions

  1. In a medium saucepan over low heat, combine drained black beans, cumin, chili powder, and a pinch of salt. Stir until heated through.
  2. Add shredded cheese to the bean mixture and stir continuously until melted.
  3. Warm each tortilla in a dry skillet over medium heat for about 30 seconds per side.
  4. Place a scoop of the bean-cheese mixture onto each tortilla. Top with sour cream, salsa, and cilantro if desired.
  5. Fold in the sides of each tortilla and roll tightly from the bottom up.
  6. Serve warm with extra salsa on the side.
