Ramen Noodle Soup is a quick, comforting dish with rich broth, tender noodles, and customizable toppings, perfect for any time you crave warmth and flavor.

  • 2 cups water
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, sliced thinly
  • 2 packs of instant ramen noodles (discard the seasoning packet)
  • 2 boiled eggs (soft or hard boiled, based on preference)
  • 1/2 cup cooked chicken (shredded, optional)
  • 1/2 cup sliced mushrooms (shiitake, button, or any variety)
  • 1/4 cup green onions, sliced
  • 1/2 cup baby spinach or bok choy
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 1 tablespoon chili oil or sriracha (optional, for spice)

Instructions

  • Prepare the broth:
    In a large pot, combine the chicken (or vegetable) broth, water, soy sauce, miso paste (if using), sesame oil, minced garlic, and sliced ginger. Bring the mixture to a simmer over medium heat, stirring occasionally to dissolve the miso paste.
  • Cook the noodles:
    Once the broth is simmering, add the ramen noodles to the pot. Cook the noodles according to the package instructions (usually 3-4 minutes). Stir occasionally to prevent them from sticking together.
  • Add the vegetables:
    While the noodles are cooking, add the sliced mushrooms and spinach (or bok choy) to the pot. Let them cook for about 2-3 minutes, or until the vegetables are tender.
  • Assemble the soup:
    Once the noodles are cooked, remove the pot from heat. Divide the ramen noodles between 2-4 bowls. Pour the hot broth and vegetables over the noodles.
  • Add the toppings:
    Slice the boiled eggs in half and place them on top of the soup. Add shredded chicken (if using), green onions, and sprinkle with sesame seeds. If you like it spicy, drizzle with chili oil or a swirl of sriracha.
  • Serve:
    Serve the ramen hot, and enjoy with extra toppings like nori, corn, or bamboo shoots if desired.

Notes

  • Feel free to customize your ramen with other toppings such as tofu, seaweed, corn, bamboo shoots, or bean sprouts.
  • If you prefer a vegetarian version, skip the chicken and use vegetable broth.
  • Adjust the broth’s seasoning by adding more soy sauce or miso paste to taste.
  • Leftovers can be stored in the refrigerator for up to 2 days. Reheat gently on the stovetop, but avoid overcooking the noodles.
