Roasted Garlic and Herb Mashed Potatoes are a creamy and flavorful side dish perfect for any occasion.   • 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter (or vegan butter for dairy-free)
  • 1/2 cup heavy cream or milk (or a dairy-free alternative)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Roast the garlic:
    • Preheat the oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until the cloves are soft and golden. Let it cool slightly, then squeeze out the roasted garlic.
  2. Cook the potatoes:
    • While the garlic roasts, place the cubed potatoes in a large pot. Cover with cold water and add 1 teaspoon of salt. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and return to the pot.
  3. Mash the potatoes:
    • Add the roasted garlic, butter, and cream to the pot with the potatoes. Mash until smooth, or leave slightly chunky if you prefer.
  4. Add herbs and season:
    • Stir in the fresh parsley, thyme, salt, and black pepper. Taste and adjust seasoning if necessary.
  5. Serve:
    • Transfer the mashed potatoes to a serving bowl. Garnish with additional herbs if desired, and serve hot.

Notes

  • For extra creaminess, you can add a dollop of sour cream or cream cheese.
  • To save time, the garlic can be roasted a day ahead and stored in the refrigerator.
  • If you prefer a lighter version, substitute the heavy cream with vegetable broth or almond milk.
