Ingredients

Scale
  • 1 (6-8 lbs) bone-in ham
  • 1 can (20 oz) pineapple rings, with juice
  • ¾ cup brown sugar
  • ¼ cup Dijon mustard
  • ¼ cup apple cider vinegar
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cloves
  • ¼ cup water

Instructions

1️⃣ Prepare the Ham:
Place the ham in the slow cooker, fat side up. This ensures the fat will melt and add flavor throughout the ham.

2️⃣ Make the Pineapple Glaze:
In a medium saucepan, combine the pineapple juice (reserve the pineapple rings), brown sugar, Dijon mustard, apple cider vinegar, cinnamon, ginger, and cloves. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves and the glaze thickens, about 5-7 minutes.

3️⃣ Glaze the Ham:
Pour the glaze over the ham in the slow cooker, ensuring it is well-coated. Add ¼ cup of water to the bottom of the slow cooker to help keep the ham moist while cooking.

4️⃣ Cook the Ham:
Cover the slow cooker and cook the ham on low for 4-6 hours, or until the ham reaches an internal temperature of 140°F. Occasionally baste the ham with the glaze for even flavor.

5️⃣ Add Pineapple Rings:
During the last 30 minutes of cooking, add the pineapple rings to the slow cooker, placing them on top of the ham and basting them with the glaze.

6️⃣ Serve:
Once the ham is cooked through, remove it from the slow cooker. Let it rest for 10 minutes before slicing. Serve with the caramelized pineapple and the glaze from the slow cooker.

Notes

  • For extra flavor, you can score the ham before cooking and brush some glaze between the cuts.
  • Leftover ham can be stored in the fridge for up to 4 days and is great for sandwiches, salads, or casseroles.
  • If you prefer a sweeter glaze, add more brown sugar to taste.
