  • 2 medium summer squash (zucchini or yellow squash), sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables by washing and slicing the summer squash and halving the cherry tomatoes.
  2. Cook the penne pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add olive oil. Once hot, sauté minced garlic for about 30 seconds until fragrant.
