  • 2 tbsp rice vinegar
  • ¼ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 2 tbsp vegetable oil (for frying)

Instructions

  1. Slice the pork into bite-sized pieces. Chop bell peppers and onion, and mince garlic.
  2. In a bowl, combine soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch mixture. Whisk until smooth.
  3. Heat vegetable oil in a large skillet over medium-high heat. Brown pork pieces in batches; remove when cooked through.
  4. In the same skillet, sauté onions, bell peppers, and garlic for about three minutes until softened.
  5. Add pineapple chunks and return pork to the skillet. Cook for two minutes to meld flavors.
  6. Pour in the sauce mixture and stir until bubbling and thickened (about three to five minutes).
  7. Serve hot over rice or noodles.
