For the Baked Brie:

  • 1 large wheel of Brie (approximately 810 oz)
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese

For the Honey & Herb Drizzle:

  • 3 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • 1/4 tsp cracked black pepper

For Serving:

  • Crackers, toasted baguette slices, or fresh fruit (grapes, apple slices, etc.)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or use a small cast-iron skillet.
  • Prepare the Brie:
    • Carefully slice off the top rind of the Brie wheel to expose the creamy interior. Place the Brie on the prepared baking sheet or skillet.
  • Make the Triple Cheese Mixture:
    • In a small bowl, combine the cream cheese, cheddar cheese, and Parmesan cheese. Mix until well blended.
  • Assemble the Brie:
    • Spread the cheese mixture evenly over the exposed top of the Brie.
  • Bake the Brie:
    • Bake in the preheated oven for 15-20 minutes, or until the Brie is warm and gooey, and the cheese topping is golden brown.
  • Prepare the Honey & Herb Drizzle:
    • While the Brie bakes, heat the honey in a small saucepan over low heat until warm but not boiling. Stir in the chopped rosemary, thyme, and black pepper.
  • Finish and Serve:
    • Remove the Brie from the oven and let it sit for 5 minutes. Drizzle the honey and herb mixture over the top.
    • Serve immediately with crackers, baguette slices, or fresh fruit.
