Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. In another bowl, mix eggs, oil, and vanilla until frothy. Gradually combine this mixture with the dry ingredients until just mixed.
  4. Gently fold in the grated carrots.
  5. Divide the batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. Let cakes cool for 10 minutes before transferring to wire racks. Frost with cream cheese frosting once completely cooled.
