Berry Merry Christmas Cake is a festive holiday dessert that combines a light, fluffy cake with layers of berry compote and whipped cream frosting. For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/4 cup sour cream

For the Berry Compote:

  • 1 cup fresh or frozen strawberries, chopped
  • 1 cup fresh or frozen blueberries
  • 1 cup fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

For the Whipped Cream Frosting:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For Garnish:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves (optional)
  • Powdered sugar (optional, for dusting)

Instructions

  • Prepare the Cake Batter:
    • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Fold in the sour cream until the batter is smooth.
    • Divide the batter evenly between the prepared cake pans and smooth the tops.
  • Bake the Cakes:
    • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • Prepare the Berry Compote:
    • In a medium saucepan, combine the strawberries, blueberries, raspberries, sugar, lemon juice, and vanilla extract.
    • Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens slightly, about 10 minutes. Remove from heat and let cool.
  • Make the Whipped Cream Frosting:
    • In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overwhip.
  • Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a layer of berry compote over the top, followed by a layer of whipped cream frosting.
    • Add the second cake layer on top and repeat the process, spreading the berry compote and whipped cream frosting evenly.
    • Garnish with fresh berries, mint leaves, and a light dusting of powdered sugar.

Notes

  • To save time, the berry compote can be prepared a day in advance and stored in the refrigerator.
  • If you prefer a sweeter cake, add an extra tablespoon of sugar to the whipped cream frosting.
  • For a gluten-free option, substitute the all-purpose flour with a 1:1 gluten-free baking mix.
  • Store the cake in the refrigerator until ready to serve.
