Instructions

1️⃣ Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a separate large bowl, beat together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the orange zest and orange juice.

2️⃣ Mix the Cake Batter:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the cranberries. Divide the batter evenly between the two prepared cake pans and smooth the tops. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
