Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Colorful sprinkles for decoration

Instructions

  1. In a large bowl, mix shredded coconut, sweetened condensed milk, and vanilla extract until sticky but not soupy.
  2. Dampen hands slightly and shape the mixture into oval ‘bunny tails,’ about 2 inches long.
  3. Melt chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  4. Dip each bunny tail into the melted chocolate using forks, then sprinkle with colorful decorations while still wet.
  5. Place coated tails on parchment paper-lined trays and refrigerate for about 30 minutes until set.
