Instructions

  1. Preheat oven and prep pan:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare dry ingredients:
    In a bowl, whisk together the all-purpose flour and baking powder until well combined.

    Cream butter and sugar:
    In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3 minutes).

    Add eggs and vanilla:
    Beat in the eggs one at a time, making sure each one is fully incorporated. Stir in the vanilla extract.

    Color the dough:
    Divide the dough into portions and add your desired gel food coloring to create the St. Patrick’s Day colors. Mix thoroughly until the color is evenly distributed.

    Scoop and shape:
    Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, leaving some space between each cookie. You can lightly press down on each cookie if you prefer a flatter shape.

    Bake:
    Bake for 10-12 minutes or until the edges of the cookies are lightly golden.

    Cool and decorate:
    Allow the cookies to cool on wire racks before decorating with sprinkles or additional icing if desired.
