Easy Chicken Spaghetti Recipe for Comfort Food Lovers

Chicken Spaghetti is a creamy, cheesy, and flavorful casserole dish that’s perfect for family dinners or gatherings.   • 2 cups cooked chicken, shredded (rotisserie chicken works great)

  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10 oz) can diced tomatoes with green chilies (e.g., Rotel)
  • 1/2 cup chicken broth (or as needed)
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  • Cook the spaghetti:
    • Preheat your oven to 350°F (175°C).
    • Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  • Prepare the sauce:
    • In a large skillet, melt the butter over medium heat. Add the onion and bell pepper (if using) and sauté until softened, about 5 minutes.
    • Stir in the cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, and chicken broth. Mix until smooth.
  • Combine the ingredients:
    • Add the shredded chicken, garlic powder, paprika, salt, and black pepper to the sauce. Stir to combine.
    • Toss the cooked spaghetti with the sauce until evenly coated. Add 1 cup of shredded cheese and mix well.
  • Bake the casserole:
    • Transfer the spaghetti mixture to a greased 9×13-inch baking dish. Sprinkle the remaining shredded cheese evenly over the top.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Serve:
    • Remove from the oven and let the dish cool for a few minutes before serving. Garnish with fresh parsley or green onions, if desired.

Notes

  • You can substitute the cream of mushroom and cream of chicken soups with homemade versions for a fresher taste.
  • For extra flavor, add cooked, crumbled bacon or sautéed mushrooms to the mix.
