- 1 (15 oz) can corn, drained
- 4 cups chicken broth
- 1 (1 oz) packet taco seasoning
- 1 teaspoon chili powder (optional for extra heat)
- 1 teaspoon cumin
- Salt and black pepper, to taste
Optional Garnishes:
- Shredded cheese
- Sour cream
- Sliced jalapeños
- Fresh cilantro
- Diced avocado
- Tortilla chips or strips

- Sauté the aromatics:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.

- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for 20-25 minutes, or until the chicken is cooked through and tender.
- Shred the chicken:
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup and stir to combine.
- Season and serve:
- Taste the soup and adjust the seasoning with salt and pepper as needed. Ladle the soup into bowls and add your favorite garnishes.
