For the Muffins:

  • 2 cups all-purpose flour

  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 1 cup semisweet chocolate chips (plus extra for topping)

Instructions

  • Prepare the Oven and Muffin Tin:
    • Preheat your oven to 350°F (175°C).
    • Line a muffin tin with paper liners or lightly grease each muffin cup.
  • Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and baking soda.
  • Mix the Wet Ingredients:
    • In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and milk.
  • Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is a bit lumpy.
  • Fold in Chocolate Chips:
    • Gently fold in the chocolate chips until evenly distributed in the batter.
  • Fill the Muffin Tin:
    • Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.
    • Top each muffin with a few extra chocolate chips for an extra indulgent touch.
  • Bake the Muffins:
    • Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean, with a few moist crumbs attached. The muffins should be golden brown on top.
  • Cool and Serve:
    • Let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • For extra moisture, try adding 1/2 cup of sour cream or yogurt to the batter.
  • If you want to make these muffins even more indulgent, add a swirl of peanut butter or Nutella to the batter before baking.
  • These muffins freeze well. Store them in an airtight container for up to 3 days at room temperature, or freeze for up to 2 months. Reheat by microwaving for 20-30 seconds.
