- 4 oz creamy goat cheese
- 2 ripe Bosc or Bartlett pears
- 2 tbsp light brown sugar
- 1/2 tsp cinnamon
- 2 tbsp unsalted butter
- Salt & pepper to taste
- 1. Preheat the oven to 400°F (200°C).
- 2. Wash and prick each sweet potato, then place them on a parchment-lined baking sheet.
- 3. Roast for 45-60 minutes until tender.
- 4. In a skillet, melt butter over medium heat; sauté chopped pears with brown sugar, cinnamon, salt, and pepper until golden brown.
- 5. Cut each sweet potato open, scoop out some flesh, and mix with goat cheese until creamy.
- 6. Stuff the potato skins with the mixture, top with caramelized pears, and return to the oven briefly to warm through.
