For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 1 lime, juiced
For the Mango Salsa:
- 2 ripe mangoes, peeled and diced
- 1/2 red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 small jalapeño, seeds removed and finely chopped (optional for heat)
- 1 tablespoon lime juice
- 1 tablespoon honey or agave (optional for sweetness)
- Salt, to taste
- Prepare the shrimp:
- In a bowl, combine the olive oil, garlic powder, paprika, cumin, salt, and pepper. Toss the shrimp in the marinade, ensuring they are evenly coated. Let the shrimp marinate for 15-20 minutes.
- Make the mango salsa:
- In a separate bowl, combine the diced mango, red onion, cilantro, jalapeño (if using), lime juice, and honey/agave (if desired). Stir gently to combine and taste. Adjust the seasoning with more salt or lime juice as needed. Set aside.
- Grill the shrimp:
- Preheat the grill to medium-high heat. Thread the shrimp onto skewers or place them directly on the grill. Grill for 2-3 minutes per side or until the shrimp are opaque and lightly charred.
