  • 1 cup water
  • 1 cup unsalted butter
  • 4 large eggs
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ cup granulated sugar
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a saucepan, melt butter with water over medium heat until simmering. Remove from heat and whisk in flour until combined.
  3. Allow mixture to cool slightly, then add eggs one at a time, ensuring each is fully incorporated.
  4. Stir in vanilla extract and baking powder until mixed; batter should be thick yet drop easily from a spoon.
  5. Drop rounded tablespoons of batter onto prepared baking sheet, spacing them two inches apart.
  6. Bake for 20-25 minutes until puffed up and golden brown. Cool slightly before dusting with powdered sugar.
