Ingredients

  • Eggs
  • Mascarpone Cheese
  • Espresso or Strong Coffee
  • Cocoa Powder
  • Vanilla Extract
  • Heavy Cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, baking powder, and sugar until combined.
  3. Gradually add eggs, mixing well after each addition until smooth.
  4. Brew strong coffee; let it cool slightly, then mix into the batter.
  5. Divide the batter evenly between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. While cakes cool, beat mascarpone cheese with heavy cream and vanilla extract until fluffy peaks form.
  7. Assemble by placing one cake layer on a serving plate, drizzling with coffee, and spreading half of the cream filling. Repeat with the second layer.
  8. Dust cocoa powder on top and chill in the fridge for at least an hour before serving.
