  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 1 tablespoon blue food coloring
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • Cream cheese frosting for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and oil until smooth; add buttermilk, eggs, food coloring, and vanilla. Blend well.
  4. Gradually combine dry mixture with wet ingredients until smooth.
  5. Divide batter into prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool before frosting with cream cheese.
