  • 6 slices thick-cut bacon
  • 2 medium zucchinis, sliced (about 2 cups)
  • 1 pre-made pie crust
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme or basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook bacon over medium heat until crispy. Drain on paper towels.
  3. In the same skillet with residual bacon grease, sauté diced onion and zucchini for about 5-7 minutes until soft.
  4. In a bowl, whisk together eggs, salt, pepper, and half of the cheese. Stir in the cooked bacon and sautéed vegetables.
  5. Place the pie crust in a pie dish and pour in the filling mixture. Top with remaining cheese.
  6. Bake for 35-40 minutes until golden brown and bubbly. Allow to cool slightly before slicing.
