  • 8 oz (225g) penne pasta
  • 1 cup (200g) cherry tomatoes
  • 8 oz (225g) block feta cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, feta cheese, and minced garlic. Drizzle with olive oil and season generously with salt and pepper.
  3. Bake for 25-30 minutes until the tomatoes burst and the feta is golden.
  4. While baking, cook the pasta according to package instructions until al dente.
  5. Once baked, mash the feta and tomatoes together with a fork. Toss in the cooked pasta and fresh basil until well combined.
