  • 1/4 cup balsamic vinegar
  • 2 tbsp raw honey
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 2 cups assorted vegetables (bell peppers, zucchini, red onions)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, salt, and pepper.
  3. Place salmon in a shallow dish and pour half of the marinade over it. Let marinate for 15 minutes.
  4. Chop the assorted vegetables into bite-sized pieces. Toss them with olive oil, salt, and pepper on a baking sheet.
  5. Place marinated salmon on top of the vegetables. Bake for 15-20 minutes until the salmon flakes easily.
  6. Drizzle remaining marinade over the salmon during the last 5 minutes of baking.
