  • 1 cup coconut milk
  • 2 tbsp korma spice blend
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp tomato paste
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Chop chicken into bite-sized pieces. Mince garlic and ginger.
  2. Heat oil in a large pot over medium heat. Sauté onions until golden brown (5-7 minutes).
  3. Add garlic and ginger; cook until fragrant (about 1 minute).
  4. Stir in chicken pieces; cook until white on all sides (about 5 minutes).
  5. Add korma spice blend, salt, and pepper; stir for 2 minutes.
  6. Pour in coconut milk and tomato paste; simmer for 15-20 minutes until chicken is tender.
  7. Squeeze lemon juice and stir in cilantro just before serving.
