  • 1/4 cup fresh cilantro (chopped)
  • 2 large eggs
  • 3 garlic cloves (minced)
  • 2 tbsp brown sugar
  • 1 tsp chili powder or flakes

Instructions

  1. Soak the rice noodles in hot water until soft but slightly firm.
  2. In a large skillet over medium-high heat, cook chicken until browned (5-7 minutes); set aside.
  3. Add minced garlic to the skillet; sauté until fragrant (about 30 seconds).
  4. Add soaked noodles to the skillet; stir to combine.
  5. In a bowl, whisk together tamari, fish sauce, brown sugar, and chili flakes; pour over noodles while stirring continuously.
  6. Mix in cooked chicken and scrambled eggs; toss to combine thoroughly (3-4 minutes).
  7. Just before serving, add green onions and peanuts; garnish with cilantro and lime wedges.
