Irresistible Crab-Stuffed Mushrooms Recipe

  • 20 large button mushrooms, stems removed
  • 8 oz crab meat, drained (fresh or canned)
  • 4 oz cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for greasing)

Instructions

1️⃣ Prepare the mushrooms:
Preheat your oven to 375°F (190°C). Clean the mushrooms and carefully remove the stems. Use a spoon to scrape out any remaining gills from the mushroom caps, making room for the stuffing. Arrange the mushroom caps on a baking sheet and lightly grease them with olive oil.

2️⃣ Make the crab stuffing:
In a mixing bowl, combine the crab meat, cream cheese, Parmesan cheese, mayonnaise, parsley, lemon juice, garlic, salt, and pepper. Stir until well combined.

3️⃣ Stuff the mushrooms:
Spoon the crab mixture into each mushroom cap, filling them generously.

4️⃣ Bake the mushrooms:
Place the stuffed mushrooms on the prepared baking sheet and bake for 15-20 minutes, or until the mushrooms are tender and the stuffing is golden and bubbly.

5️⃣ Serve:
Remove the mushrooms from the oven and let them cool slightly. Garnish with additional parsley if desired, and serve warm.

Notes

  • For a bit of crunch, you can sprinkle some breadcrumbs or additional Parmesan on top of the stuffing before baking.
  • If you don’t have fresh crab, canned crab works just as well in this recipe.
  • These mushrooms can be made ahead of time. Simply stuff them and refrigerate until ready to bake.
