Creamy Chicken and Spinach Casserole is a comforting dish that combines tender chicken, fresh spinach, and a rich creamy sauce topped with crunchy panko breadcrumbs.   • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil and sauté chopped onions and minced garlic until soft (about 3 minutes).
  3. Dice the chicken breasts into bite-sized pieces and add them to the skillet. Season with salt and pepper; cook until no longer pink (about 5-7 minutes).
  4. Add fresh spinach and heavy cream to the skillet; stir until the spinach wilts (about 2-3 minutes).
  5. Remove from heat and mix in shredded cheddar and parmesan cheese until melted.
  6. Transfer the mixture to a greased baking dish and top with panko breadcrumbs.
  7. Bake for 25-30 minutes or until golden brown on top.
